Cut the butter into the dry ingredients until pea sized pieces form.

Pack the shortbread into a square baking pan and bake for 22-25 minutes.

Melt the caramel ingredients then whisk in the miso paste. Cook to 225°F (107°C).

Spread the caramel into an even layer over the shortbread. Chill in the fridge for 1 hour to set.

Melt the dark chocolate and cream over a double boiler to make the ganache.

Spread the ganache over the caramel and sprinkle with flaky sea salt. Chill for 2 hours.
