Blitz the pesto ingredients in a food processor. Then slowly drizzle in the olive oil and mix until combined.

Cook the mushrooms for 2 minutes then set aside in a bowl.

Cook the chicken then add the white wine to scrape any brown bits in the pan. Then add back the mushrooms.

Add the pesto and toss to coat the chicken and mushrooms.
