Winter Spiced Granola

This homemade granola is filled with winter flavors like cinnamon, cardamon, cloves, and dried cranberries. It also has other delicious ingredients like orange zest, coconut flakes, and nuts. It's perfect as a healthy breakfast or snack.

Ingredients
 

  • 2 cups (230 g) old-fashioned rolled oats
  • cup (40 g) walnuts
  • cup (40 g) roughly chopped pecans
  • cup (50 g) pepitas
  • ½ tsp orange zest
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground cardamon
  • ½ tsp fine sea salt
  • ¼ cup (60 ml) coconut oil melted
  • 1 tsp pure vanilla extract
  • cup (80 ml) pure maple syrup
  • ½ cup (25 g) unsweetened coconut flakes
  • ½ cup (60 g) dried cranberries

Instructions

  • Preheat oven to 350°F (180°C) and line a large baking sheet with parchment paper. 
  • In a large bowl, combine the oats, nuts, pepitas, orange zest, spices, and salt. Toss until everything is evenly mixed.
  • Pour in the coconut oil, vanilla extract, and maple syrup. Toss until everything is coated and thoroughly mixed.
  • Place onto the prepared baking sheet, evenly spreading it out. Bake for 10 minutes. 
  • Remove from the oven and toss in the coconut flakes. Bake for another 5-8 minutes or until the the oats and coconut flakes are lightly golden.
  • Transfer to a cooling rack and cool for about 10 minutes before stirring in the dried cranberries. Enjoy!

Notes

  • For chunkier granola, let it sit longer before breaking it up and storing it. Do this after you've tossed in the dried cranberries.
  • The recipe makes about 4 cups of granola.
