    This refreshing Strawberry Ginger Smoothie is the perfect early morning breakfast. It’s full of frozen strawberries, spicy ginger, and a touch of creamy coconut milk.

    Strawberry Ginger Smoothie.

    This bright Strawberry Ginger Smoothie is a great way to get in some fruit in the early morning hours. It’s wonderfully creamy and naturally sweetened with strawberries and Manuka honey. The ginger livens up the overall flavor and the spiciness complements the sweet strawberries.

    Ingredient Notes

    • Plain Unsweetened Almond Milk: You can use another plant-based milk like oat milk or soy milk.
    • Coconut Milk: This makes the smoothie extra creamy and adds a bit of coconut flavor.
    • Frozen Strawberries: We use whole frozen strawberries.
    • Fresh Ginger: Be sure to peel it before adding it to your smoothie.
    • Manuka Honey: This “superfood” is slightly bitter compared to regular honey. If you opt for regular honey, you’ll need significantly less in your smoothie.
    • Vanilla Bean Paste: If you only have vanilla extract, use ½ tsp.
    • Collagen Peptides: We like to add this to our smoothies but you don’t have to.

    Step-by-Step Instructions

    1. Add everything to a high-speed blender. Blend until smooth and liquidy. If you’re using collagen peptides, these can easily get stuck to the sides of the blender, so be sure to scrape them down and blend for a few more seconds.

    2. Serve. Pour into a tall glass and enjoy!

    Optional Add-ins

    Feel free to add any of these to your smoothie and make adjustments as needed.

    • Chia seeds
    • Greek yogurt
    • Protein powder
    • A splash of citrus like orange or lemon juice

    Ingredients
     

    • ¾ cup (180 ml) plain unsweetened almond milk
    • ¼ cup (60 ml) full-fat coconut milk chilled
    • 1 cup (135 g) frozen strawberries
    • 1 inch fresh ginger peeled
    • 1 tbsp Manuka honey *
    • 1 tsp vanilla bean paste
    • 2 tbsp collagen peptides
    Prevent your screen from going dark

    Instructions

    • Add everything to a high-speed blender and blend until smooth.
    • Pour into a cup and enjoy!

    Notes

    • Manuka Honey: If you’re using regular honey, you may want to start with ½ or 1 tsp and make adjustments from there. Manuka honey is slightly bitter compared to regular honey which is why we used 1 tbsp.
    • You can use ½ tsp of vanilla extract in place of the vanilla bean paste.
    • The smoothie is just under 16 oz or 450 ml.
