This refreshing Strawberry Ginger Smoothie is the perfect early morning breakfast. It's full of frozen strawberries, spicy ginger, and a splash of creamy coconut milk.

Ingredients
 

  • ¾ cup (180 ml) plain unsweetened almond milk
  • ¼ cup (60 ml) full-fat coconut milk chilled
  • 1 cup (135 g) frozen strawberries
  • 1 inch fresh ginger peeled
  • 1 tbsp Manuka honey *
  • 1 tsp vanilla bean paste
  • 2 tbsp collagen peptides

Instructions

  • Add everything to a high-speed blender and blend until smooth.
  • Pour into a cup and enjoy!

Notes

  • Manuka Honey: If you're using regular honey, you may want to start with ½ or 1 tsp and make adjustments from there. Manuka honey is slightly bitter compared to regular honey which is why we used 1 tbsp.
  • You can use ½ tsp of vanilla extract in place of the vanilla bean paste.
  • The smoothie is just under 16 oz or 450 ml.
