Ingredients
 

  • 1 ½ cups (350 ml) whole milk
  • 1 tbsp hojicha powder sifted
  • 1 tsp Dutch-processed cocoa powder sifted
  • tsp fine sea salt
  • 3 oz (85 g) high-quality 70% dark chocolate roughly chopped
  • 1 tbsp maple syrup plus more to taste

Instructions

  • To a small saucepan, add the milk, sifted hojicha powder, cocoa powder, and salt. Place over medium heat and whisk to combine. Bring to a simmer.
  • Once simmering, reduce to low heat and add the dark chocolate and maple syrup. Whisk until smooth and lightly thickened then turn off the heat.
  • Use a handheld milk frother to aerate the hot chocolate until bubbly.
  • Pour into two mugs and top with whipped cream and chocolate shavings if desired.

Notes

  • The hot chocolate is slightly on the bitter side, so if you like yours sweeter you can always add more maple syrup. It does tend to taste sweeter as it cools so just keep that in mind.
