Ingredients
 

Smashed Chickpea Salad

  • 1 15.5-oz (439 g) canned chickpeas drained and rinsed
  • cup + 2 tbsp (100 g) mayo
  • ¼ cup (8 g) fresh dill packed, chopped
  • ¼ cup (34 g) finely chopped red onion
  • 2 tbsp finely diced cornichons
  • 1 tsp cornichon juice from the jar
  • ½ tsp white wine vinegar
  • 1 tsp paprika
  • ¼ tsp fine sea salt
  • ¾ tsp ground black pepper

For the Sandwiches

  • 8 slices whole grain sandwich bread
  • Butter lettuce
  • Microgreens

Instructions

  • Add the drained chickpeas to a medium bowl. Use a potato masher or forks to roughly smash the chickpeas, leaving a few whole ones for texture.
  • Add the mayo, dill, red onion, cornichons, cornichon juice, vinegar, paprika, salt, and pepper. Stir to combine.
  • Build the sandwiches by layering the chickpea filling, butter lettuce, and microgreens in between the sandwich bread.
