Smashed Chickpea Salad Sandwiches
Ingredients
Smashed Chickpea Salad
- 1 15.5-oz (439 g) canned chickpeas drained and rinsed
- ⅓ cup + 2 tbsp (100 g) mayo
- ¼ cup (8 g) fresh dill packed, chopped
- ¼ cup (34 g) finely chopped red onion
- 2 tbsp finely diced cornichons
- 1 tsp cornichon juice from the jar
- ½ tsp white wine vinegar
- 1 tsp paprika
- ¼ tsp fine sea salt
- ¾ tsp ground black pepper
For the Sandwiches
- 8 slices whole grain sandwich bread
- Butter lettuce
- Microgreens
Instructions
- Add the drained chickpeas to a medium bowl. Use a potato masher or forks to roughly smash the chickpeas, leaving a few whole ones for texture.
- Add the mayo, dill, red onion, cornichons, cornichon juice, vinegar, paprika, salt, and pepper. Stir to combine.
- Build the sandwiches by layering the chickpea filling, butter lettuce, and microgreens in between the sandwich bread.
