    Smashed Chickpea Salad Sandwiches

    If you’re in need of a quick lunch, these Smashed Chickpea Salad Sandwiches will definitely do the trick. They’re simple to make yet packed with tons of flavor. Plus, these sandwiches are a great vegetarian option that are both satiating and delicious.

    These Smashed Chickpea Salad Sandwiches are reminiscent of the egg salad sandwich we love so much from a local bakery here in Austin (Upper Crust Bakery). The hearty yet delicate filling is sandwiched between two pieces of wheat bread and you can add any toppings you like.

    The chickpea filling is so good it stands out on its own, but we still added a bit of greens to complete the sandwich. Of course, a good helping of crunchy potato chips are the perfect pairing for this lunch recipe. And it would be a nice sandwich to bring along with you to a picnic.

    • Mayo: Our favorites are Duke’s or Hellmann’s, but feel free to use a vegan mayo if you like.
    • Cornichons + Juice: A bit of juice from the cornichon jar gives the filling a bit more bite.
    • White Wine Vinegar: This works in tandem with the cornichon juice, adding more acidity to the salad without making it too pickle-y from the juice alone.
    • Paprika: A good dose of sweet paprika rounds out all the flavors. If you want to get a bit experimental, you can try a mix of sweet and smoky paprika.
    • Whole Grain Bread: We recommend a nice wheaty sandwich bread for this recipe, but it would work well with a hearty gluten-free bread too.

    1. Smash the chickpeas and make the filling. Use a potato masher or forks to roughly mash the chickpeas. Add the rest of the ingredients and mix to combine.

    2. Build the sandwiches. Layer the sandwich with the chickpea salad filling, butter lettuce, and microgreens.

    Ingredients
     

    Smashed Chickpea Salad

    • 1 15.5-oz (439 g) canned chickpeas drained and rinsed
    • ⅓ cup + 2 tbsp (100 g) mayo
    • ¼ cup (8 g) fresh dill packed, chopped
    • ¼ cup (34 g) finely chopped red onion
    • 2 tbsp finely diced cornichons
    • 1 tsp cornichon juice from the jar
    • ½ tsp white wine vinegar
    • 1 tsp paprika
    • ¼ tsp fine sea salt
    • ¾ tsp ground black pepper

    For the Sandwiches

    • 8 slices whole grain sandwich bread
    • Butter lettuce
    • Microgreens

    Instructions

    • Add the drained chickpeas to a medium bowl. Use a potato masher or forks to roughly smash the chickpeas, leaving a few whole ones for texture.
    • Add the mayo, dill, red onion, cornichons, cornichon juice, vinegar, paprika, salt, and pepper. Stir to combine.
    • Build the sandwiches by layering the chickpea filling, butter lettuce, and microgreens in between the sandwich bread.
