This Truffle Grilled Cheese is great for enjoying on those cold and rainy days spent lying on the couch. We love the combination of black truffle oil combined with gruyere and gouda cheese that melt perfectly into the toasty sourdough bread. Ingredients
- Black Truffle Oil: Be sure you’re buying real truffle oil. Fake ones are full of chemicals.
- Unsalted Butter: For those perfectly crispy and browned slices of bread.
- Sourdough Bread: The rustic look and tanginess of the bread make this sandwich top-notch.
- Gruyere Cheese: This cheese has a rich, slightly nutty flavor and a creamy texture.

- Arugula: We had to add some greens in somewhere! Plus it adds a bit of color and balances out the richness of the sandwich.
How to Make a Grilled Cheese
First things first, you’ll want to preheat your pan with the oil. Sprinkle a bit of water on the pan to test if it’s hot enough. If it sizzles, it’s ready to go!
Next, place half of the buttered bread slices into the pan (butter side down) and sprinkle on the cheese and arugula. Then add the remaining slices on top to close the sandwich (butter side up).
As it’s cooking, gently press the top with a spatula to melt the cheese. Once the bottoms are golden brown, flip the sandwiches over.
Again, lightly press the tops with a spatula and remove from the pan once both sides are golden brown and the cheese is nice and melty.

- If you’re able to get some black truffles, add a few thin slices into your sandwich for a more intense truffle flavor.

- Use high-quality bread. We love using sourdough, but any rustic bread will do.

There’s actually a whole debate on whether or not any truffle oil on the market contains truffles. Even so, you’ll want to stay clear of any oils that list ‘natural flavoring’ or ‘artificial flavoring’ in their ingredients. Real truffles are pretty expensive so a good truffle oil is the next best option. We use Truff which is made from light olive oil infused with black winter truffles.
Nope! If arugula isn’t your thing, you can substitute it with another green like spinach or omit it all together.
Grilled cheeses are best served fresh, so we wouldn’t recommend making this until you’re ready to eat it. You can however, prep your ingredients ahead of time by shredding the cheese and portioning out the arugula.

Truffle Grilled Cheese
Ingredients
- 2 tbsp black truffle oil
- 2 tbsp (28 g) unsalted butter room temperature
- 4 slices sourdough bread
- 4 oz (114 g) gruyere cheese shredded
- 3 oz (86 g) gouda cheese shredded
- ½ cup (20 g) arugula packed
Instructions
- In a large skillet, heat the truffle oil over medium heat.
- Meanwhile, butter one side of each slice of bread.
- Place half of the slices onto the heated skillet with the butter side touching the pan. Sprinkle an even amount of cheese onto the bread and add the arugula on top.
- Place the remaining slices of sourdough on top of the slices with cheese, laying them butter side up.
- As it cooks, lightly press the tops with a spatula to help melt the cheese. Once the bottoms are golden brown, flip the sandwiches over and press the tops again with the spatula.
- Cook until both sides are golden brown and the cheese is melted through.
- Remove from the pan then slice in half and serve immediately.
Notes
- Preheating the pan: To test if the pan has fully preheated before adding the bread, wet your hands with a bit of water and sprinkle some onto the pan. If the drops sizzle, the pan is ready to use. If not, wait a minute or so and test it again.
- If you can get your hands on some black truffles, add a few slices inside your grilled cheese for an even stronger truffle flavor.
