This non-alcoholic Pineapple Hibiscus Fizz is perfect for summer! It’s sweet, refreshing, and is sure to quench your thirst on a hot sunny day. It’s made with homemade hibiscus syrup, pineapple juice, and club soda.
Summer is officially here in Texas so it’s time for ice cold drinks like this Pineapple Hibiscus Fizz! It’s our second non-alcoholic cocktail featuring our homemade hibiscus syrup which is essential to this recipe.
The syrup has warming spices which give the drink a complex fruity flavor and perfectly compliments the bright flavors of the lime and pineapple juice. We added a few dashes of bitters to enhance the other ingredients, and the club soda adds that extra refreshing bubbliness.

- Hibiscus Syrup: We use our homemade hibiscus syrup for this recipe. It’s lightly spiced with cinnamon, cardamom, and cloves for extra depth. It’s great for making multiple drinks in the summer like agua frescas!
- Pineapple Juice: Canned pineapple juice works fine. Just make sure it’s 100% pineapple juice.
- Lime Juice: Fresh is always best.
- Angostura Aromatic Bitters: A couple of dashes ties everything together and brings out more of the pineapple flavor.
- Club Soda: You can also use sparkling water.

Expert Tips
- Make the hibiscus syrup the night before. It takes about an hour and a half to infuse the spices and hibiscus flowers into the syrup. Good news is that you can make tons of drinks with it like our Non-Alcoholic Hibiscus Margarita.
- Chill the pineapple juice and club soda at least 1 hour beforehand. The cold temperature helps to retain the bubbles in your drink so it’s perfectly crisp and bubbly.

Pineapple Hibiscus Fizz
Ingredients
- 1 ½ oz (45 ml) hibiscus syrup* chilled
- 1 ½ oz (45 ml) pineapple juice chilled
- ½ oz (15 ml) fresh lime juice
- 2 dashes Angostura bitters
- 4 oz (125 ml) club soda chilled
- Pineapple leaves for garnish (optional)
- Dried hibiscus flowers for garnish (optional)
Instructions
- Add all the ingredients (except the club soda) to a cocktail shaker and fill with ice. Shake for 10 seconds until chilled.
- Strain into a highball or Collins glass filled with ice and top with club soda. Garnish with pineapple leaves and dried hibiscus flowers if desired or use a pineapple slice.
