Pumpkin Spice Oat Milk Latte
I’ll be honest and say I’ve never tried Starbucks’ pumpkin spice latte, but I much prefer to make my own. It’s much more satisfying and it usually comes out way better. That being said, this pumpkin spice latte is not only super tasty, but it’s also dairy free! Without sacrificing the creaminess you get from whole milk, we use oat milk to get a similar texture. It’s easy to make on the stovetop and takes little to no time at all. It also has a blend of whole spices and ground spices to minimize the amount of grain left at the bottom of the cup. Plus, a whole cinnamon stick makes things feel just a bit more luxurious!
Ingredients
- Oat Milk: We love to use oat milk for dairy free drinks because it has a nice creamy texture much like whole milk.
- Pumpkin Purée: You’ll need 3 tbsp of pumpkin purée. Be sure to get the purée and not the pumpkin pie filling.
- Vanilla Extract: This adds a little touch of flavor.
- Ground Ginger: This is a staple in pumpkin spice so don’t skip it!
- Ground Nutmeg: All you need is ⅛ tsp.
- Cinnamon Stick: You’ll need 1 cinnamon stick. We also like to leave it in the finished drink.
- Whole Cloves: You’ll need 2 whole cloves.
- Flaky Sea Salt: Just a pinch of flaky sea salt is enough to bring out the other flavors.
- Espresso: One shot of espresso is the perfect amount for this recipe. We find that a double shot makes the drink too bitter. So you’re still getting the caffeine without sacrificing the flavor.
- Maple Syrup: Use 1-2 tbsp of maple syrup to sweeten your drink. It also fits in with all the other fall flavors in this recipe!
How to Make This Pumpkin Spice Oat Milk Latte
- Add: Add all the ingredients to a small saucepan over medium-low heat.
- Simmer: Let it reach a simmer, but don’t let it boil.
- Stir: Stir in the maple syrup and espresso.
- Pour: Lastly, pour it into a mug and enjoy! It’s as easy as that!

Yes, you can swap the cinnamon stick for ½ tsp of ground cinnamon. You can also use a pinch of ground cloves in place of the whole ones.

A Few Tips
- Don’t rush the process! If you cook it over medium heat instead of medium-low, you won’t get the same flavor. The lower heat allows the spices to bloom and blend into the oat milk. Otherwise, they won’t have time to do so, making the drink taste bland.
- Leave the cinnamon stick in: We love to leave in the cinnamon stick once it’s done because the flavor continues to mix into the drink.
- Use a milk frother for a nice foamy top. You can also use a whisk to briskly mix everything together until frothy.

Pumpkin Spice Oat Milk Latte
Ingredients
- 1 cup (250 ml) barista blend oat milk
- 3 tbsp canned pumpkin purée
- ½ tsp pure vanilla extract
- ¼ tsp ground ginger
- ⅛ tsp ground nutmeg
- 1 cinnamon stick
- 2 whole cloves
- 1 pinch flaky sea salt
- 1 shot espresso
- 1-2 tbsp maple syrup or to taste
Instructions
- In a small saucepan over medium-low heat, whisk together the oat milk, pumpkin purée, vanilla extract, ginger, nutmeg, and salt. Add the cinnamon stick and cloves and bring to a simmer.
- Once simmering, stir and simmer again for another minute.
- Remove from the heat and take out the cloves and cinnamon stick. Stir in the espresso and maple syrup.
- Pour into a mug and add back the cinnamon stick. Top with a dash of cinnamon and enjoy!
Notes
- Cinnamon Stick & Cloves: While we recommend using these spices whole, you can substitute 1 stick of cinnamon for ½ tsp. Likewise, you can replace the whole cloves with a pinch of ground cloves.
