Ingredient Notes
Ingredient quantities are listed in the recipe card at the bottom of the post. Here you’ll find notes on why we chose certain ingredients as well as any substitutions.
- Non-Alcoholic White Wine: We use Surely brut white wine which is a zero-proof dry white wine. A good substitute is Noughty’s Sparkling Chardonnay (also alcohol-free).
- Cinnamon Sticks: After using them for the simple syrup, we like to toss them into the drink to spice it up even more.
- Granulated Sugar: For making the simple syrup.
- Apples: We recommend using a blend of sweet and tart apples to keep things balanced and not too sweet. Stick with the Granny Smith apple and pair it with Honeycrisp, Fuji, or Red Delicious if you don’t have a Gala apple.
- Bartlett Pear: You can substitute it with a Bosc or Asian pear.
- Orange: You only need half a sliced navel orange.
- Apple Juice: For even more apple flavor.
- Pomegranate Juice: This adds another fruity layer and a bit of color.
Step-by-Step Instructions
This section provides a general overview as well as any pictures to guide you through the recipe. The full detailed recipe instructions are in the recipe card at the bottom of the post.
STEP 1: Make the simple syrup. Place the cinnamon sticks and sugar in a small saucepan with ½ cup (125 ml) of water. Bring to a boil then simmer on medium-low for 10 minutes. Set aside to cool with the cinnamon sticks still inside.
STEP 2: Slice the fruit. While the syrup is cooling, thinly slice the fruit.
STEP 3: Combine all the ingredients. Add the sliced fruit to a large pitcher with the apple juice, pomegranate juice, ⅓ cup of the cinnamon syrup, cinnamon sticks, and non-alcoholic wine. Stir to combine.
STEP 4: Chill. Cover and chill in the fridge for at least 4 hours and up to 48 hours. Serve over ice with the fruit and enjoy!
Expert Tips
- Keep it in the fridge overnight. This allows ample time for the fruit and spices to infuse into the “wine”.
- Caramelize the leftover apples. If you’re not sure what to do with the leftover apple halves, we suggest caramelizing them in a bit of butter, brown sugar, and spices. It makes a great topping for oatmeal or yogurt! The last bit of orange is also great for garnishing cocktails.
- Use the leftover syrup for another drink. You’ll likely be left with a small amount of cinnamon syrup, which is just enough to sweeten a latte.
- Add bubbles! For a fizzy drink, add a splash of club soda or sparkling water.
FAQ
Some upscale grocery stores and liquor stores are starting to carry non-alcoholic wines. If you can’t find any in store, we recommend online sites like Boisson which are stocked with tons of options. Just make sure you’re getting a “dry” or “brut” wine which is less sweet than other types.
After a while the fruit will start to get soggy, so we recommend keeping it in the fridge for no longer than 48 hours.

- 2 cinnamon sticks
Fall Sangria:
- ⅓ cup (80 ml) cinnamon simple syrup plus the cinnamon sticks
- ½ Gala apple
- ½ Granny Smith apple
- 1 Bartlett pear
- ½ orange
- ¼ cup (60 ml) apple juice
- ¼ cup (60 ml) pomegranate juice
- 1 750-ml bottle non-alcoholic Surely brut wine*
Instructions
- Add the sugar, water, and cinnamon sticks to a small saucepan placed over medium heat. Stir frequently until the sugar has dissolved then bring to a boil.
- Reduce the heat to medium-low and simmer for 10 minutes. Remove from the heat and set aside to cool.
- Meanwhile, cut the fruit into thin slices and add them to a large pitcher.
- Add ⅓ cup (80 ml) of the cooled cinnamon syrup to the pitcher along with the cinnamon sticks. Pour in the apple juice, pomegranate juice, and non-alcoholic wine.
- Stir to combine then cover with plastic wrap and chill in the fridge for at least 4 hours or up to 48 hours. The longer it sits, the stronger the flavor.
- Serve over ice with a few slices of fruit from the pitcher.
Notes
- Non-Alcoholic Wine: If you can't find the exact brand we used, another good alternative is Noughty Sparkling Chardonnay. Just make sure it's a brut or dry non-alcoholic wine.
- We recommend making the sangria the night before so the flavors have more time to infuse.
- For a bubbly option, add a few ounces of club soda or sparkling water to your drink.
- If you end up with extra cinnamon syrup, store it in an airtight container in the fridge and use for cocktails or coffee drinks.
- Nutrition information includes the fruit slices. If you don't eat all the fruit, the calories and sugar content will be less.
